How can we check the freshness of the egg?
The most common and well-know technique is to place the egg into water.If the egg goes to the bottom of the water it is very fresh, if it goes to the middle it is not so fresh and if it stays on the top of the water, it is quite old due to its large air pocket.
Another technique to check the freshness of the egg is to shake it. The fresh egg does have only a very small air pocket by the tubbier end, which is growing day by day. If we shake a very fresh egg by our ears we cannot hear anything, but if the egg is older we can hear a blunt voice.
The tenability of the egg has to be shown on the package of each item. It is not necessary to show the date when the bird gave the egg, but it is essential to show the tenability date.
The most practical way to store the fresh eggs is to place them into a plastic box, called egg box. The egg box has to be clean, without previous damaged eggs` liquids with ventilation holes. It is also important that the eggs in the box should be dry cleaned and store in a cool, dry place on a maximum of 12°C . It is better to keep them below 5°C.
If we want to keep the eggs for longer it has to be placed in the box wit theaces up (in this case the egg yolk goes to the bottom). If we want the egg yolk to be on the middle of the egg, we can place it upside down, but in this case the tenability of the egg is shorter.
